Best litson baboy I had combined the techniques of kalua pig with the litson roasting of the outer skin.
Hot rocks are placed in the cavity of the pig and then the orifices are sealed. The pig is then roasted in traditional fashion.
This produces the crispy skin for which lechon is famous and the gelatinous meat of kalua pig on the inside.
