Stuffed Green Peppers

4 med/large green peppers
1 pound ground turkey, (meat)
1 or 2 cloves garlic, minced
1 small onion, diced small
1 med. potato, diced small
1 red pepper, diced
1/2 cup peas
1 med. tomato or 1/4 cup tomato sauce
1 tsp. ground black pepper, salt to taste
1 tsp. ground turmeric
Olive oil

In a wok or skillet, with 2 tbsp. of oil, saute garlic, then add onion, stir awhile, then add potato, keep stirring until the potatoes are almost done. Transfer in a dish, set aside.

Heat again 2 tbsp. oil, add the meat, stir and cook until the meat is browned and its liquid
evaporated. Add the seasoning, tomato sauce, and stir, then add the red pepper, peas, cover and
simmer, until the red peppers are tender (5 - 10 minutes).

Uncover and add the mixture that was set aside, mix well.
Turn off heat and begin to stuffed the peppers.

Clean the peppers. Cut a hole from the stem end of each pepper. Remove seeds. Stuff.

1/4 cup water, 1/2 cup tomato sauce
In a stainless steel skillet, heat 2 tbsp. oil, then add the tomato sauce and water.

Place the stuffed peppers, cover and cook on top of the stove for 20 minutes, or until it reached
the desired tenderness of the peppers.

Transfer the peppers in a serving dish. If the sauce is not thick enough, boil the liquid uncovered until it reached the desired consistency.

Pour the sauce over the stuffed peppers. Serve and savor.
