Vegetarian Stuffed Green Peppers
4 med/large green peppers
1 pound med./firm tofu, diced small
15 fresh shitake (or to spell it differently, to bypass the censore, chitake) mushrooms or your favorite mushrooms
1/4 cup tomato sauce
2 cloves garlic, minced
1 med onion, diced small
1 med. potato, diced small
1 red pepper, diced
1 cup peas
1 small zucchini, diced or julienne
1 cup polenta
1 tsp ground turmeric
Salt and pepper to taste
Olive oil
Heat 2 tbsp. oil in a wok or skillet, add mushroom and cook until liquid evaporated (10 minutes). Set aside
Heat 2 tbsp. oil and saute garlic, onion, stirring, then add the potatoes,
red pepper, zucchini, peas, tomato sauce, seasoning, cover and simmer, until tender.
Add the tofu, polenta, cooked mushroom and mix well.
Slice the stem end of each pepper, remove seeds. Stuff
Sauce: 1/2 cup tomato sauce, 1/4 cup water, salt and pepper to taste.
In a stainless steel skillet heat 2 tbsp. oil, add the tomato sauce and water.
Place the stuffed peppers, cover and simmer for 20 minutes or until the desired tenderness of the peppers.
Transfer the peppers in a serving dish. If the sauce is not thick enough, boil
uncovered until it reached the desired consistency. Pour sauce over the peppers.
Serve and savor.
