Take the shells off large shrimp and leave the tails. The tempura mix sold in asian food stores is pretty good. Or mix put one egg in a measuring cup and add enough cold water to make 1 cup. Mix in a bowl. Add just under 1 cup of sifted light wheat flour. Whisk a bit, but don't overmix (leave lumpy). Dip the shrimp and fry in hot, deep oil. Test the oil first with a bit of batter. It should float and sizzle.. Serve with 1 cup dashi, 3 tablespoons mirin and 5 tablespoons of soy sauce.
