Shrimp Omelet
Ingredients:
15-20 medium shrimps
¼ cup water
1 small onion, sliced
3 eggs, scrambled, sprinkled with pinch of salt and pepper.
Cooking oil (olive, canola, peanut oil)
Procedure:
Cook shrimps with water and salt (pinch) for 5 minutes over medium heat. Peel and set side.
Cook sliced onions with 1 teaspoon oil in a nonstick skillet for 2 minutes ( Do not overcooked for it will turned very sweet).Sprinkle with a pinch of salt. Set aside with the shrimps and mix.
Heat 1 tablespoon oil in a nonstick skillet. Pour in the scrambled eggs. Turn and move the skillet around so as to cover bottom of the skillet. Keep moving the pan and cook for 1-2 minutes, until it’s a bit dry but still moist , then add in the shrimp mixtures on half side of the skillet, then fold, so it will look like half moon. Transfer in heated platter.
Serve with boiled rice or garlic rice, and steamed green mustard or spinach.
Garlic Rice
4-5 cloves of garlic (minced)
1 tablespoon oil
4-5 cups cooked rice, crumbled
Fry garlic until golden brown, then add rice and stir fry for 5-10 minutes or until desired doneness.
Salt to taste.
