Sans Rival

Wafers
10 egg whites, at room temp.
1 cup sugar
2 cups finely chopped almonds (buy sliced almonds, its easier to chop)
or use other nuts, such as cashew,walnuts, pecans, pistachio.

Icing
5 egg yolks
½ cup light corn syrup
2 tablespoon water
½ cup sugar
¼ lb. (1 stick) butter
1 cup powdered sugar (confectioner sugar)

Topping
½ cup finely chopped almond nuts

Procedures:
Beat egg yolk, set aside
Combine sugar, corn syrup and water in a small saucepan and cooked over low heat until it comes to a slow boil, cook for another 3 minutes.
Pour hot syrup gradually to egg yolks, beating continously. Let cool
Cream butter and powdered sugar and add the cooled yolk mixture, beat until smooth. Set aside.

Preheat oven to 325 degrees F. Grease and flour two 11-1/2” x 15-1/2” cookie sheets
(cookie sheets can be a bit bigger) Set aside.

Beat egg whites until soft peaks formed, add sugar 1 tablespoon at a time and beating well at each addition. Beat until stiff.
Mix in chopped nuts with spatula.
Spread evenly on prepared cookie sheets ¼ inch thick. Bake for 30 minutes or until golden brown.

Cut wafer in the center as soon as it comes out of the oven. Loosen bottom with spatula and turn over to a paper-lined flat surface.

Spread icing thinly on top of each wafer and stack to make 4 layers.
Sprinkle top with ½ cup of chopped nuts. Let cool. Cut in squares. Do not cover.
