RECIPES: INDIAN ICE CREAM (KULFI)
To make traditional Kulfi is quite time consuming, however this is a deilciously easy version instead. (serves 6-8)
Ingredients:
1/3 cup boiling water
4 cardomon pods (crushed nd seeds removed)
14oz sweetened condensed mik
1/4 cup unsalted pistachio nuts
1/4 cup canched almonds
2 drops almon essence (optional)
1/4 pint double cream lime zest/rose petals (to decorate)
Instructions
1. Pour the boiling water into a bowl, stir in the cardomon seeds and leave for 15 minutes to infuse.
2.Put the condensed milk into a blender together with the cold water, pistachio nuts, almonds and almond essence. Process the mixtur for 30 0seconds until very finely mixed.
3. Add the cooled and strained cardomon watre and pour ointo a bowl. Whipp the cream until soft peaks form. Whick into the mixrure. Pour into a shallow metal or plastic cntainer and freexe for about three hours or until semi frozen around the edges and mushy in the centre.
4. Transfer the mixture into a bow and mash well with a fork (to break uo the ice crystals). Divide the muxture evenly between 6-8 moulds and freeze for at least 4 hours or overnight until firm.
5. To serve, dip the base of each mould quockly into hot water and run a jknife around the to edge. Turn out onto serving plates and decorate with lime zest and rose petals if using.
