Hi Benn, I know how it is to crave the lutong Pilipino, here's one recipe I know.

Chicken Relleno

One 5 lbs roasting chicken

Seasoning:

3 tbsp soy sauce, 2 tbsp lemon juice

Stuffing:
1 lb. ham, finely chopped
2 lb. finely ground pork
2 chorizo de bilbao, finely chopped
3 tbsp sweet relish, 2 medium carrots, finely chopped
3 eggs, unbeaten
1 small onion, finely chopped
1/2 cup grated cheddar cheese
salt and pepper to taste
1/2 cup of peas ( frozen or can )
1 red pepper, finely chopped

Debone chicken and marinate skin in seasoning
Grind chicken meat in a meat grinder or chopped finely
Combine stuffing and chopped chicken meat and stuff the chicken skin
Sew together with needle and thread
Rub stuffed chicken with olive oil and place in a roasting pan (oiled)
Cover with a foil loosely and bake for 2 hrs in the oven at 350 degrees.
