Studies have shown honey is good at preventing mycotoxicity. Apparently it does this partly by improving intestinal flora, a practice you mention in your post.
Also, the production of natural hydrogen peroxide and other related by-products when honey is mixed with water may also contribute to the anti-mycotoxin properties.
Hydrogen peroxide causes mycotoxins to naturally and harmlessly decompose.
